A few years ago I tried to make royal icing, and it was awful! It was runny and didn’t taste good at all. I finally got over my fears this year and got work. This royal icing recipe is both simple and yummy! My sugar cookies tasted as if they came directly from the bakery!
Ingredients:
- 4 C powdered sugar
- 3 TBS meringue powder
- 10 TBS room temperature water
- Optional gel food coloring
Directions:
- If using a stand mixer, use the whisk attachment to beat all of the ingredients together on high speed for about 2 minutes. You want the icing to drizzle down like a ribbon and smooth into the rest of the mix within 5-8 seconds. If your icing is too thick add more water, 1 tablespoon at a time. If it’s too thin add more powdered sugar.
- If you are using a hand mixer, follow all of the same directions above but it may take another minute or so to get the right consistency.
- Once it’s how you like it, add your gel food coloring, put it in piping bags, and decorate your cookies.
- The icing should be good for stacking in about 2.5 hours. If you want to layer your decorating, place the cookies in the fridge to speed up the process.
Makes about 3 cups of icing!
