This masterpiece (I am NOT exaggerating) was born from an impromptu dinner party on a Monday night. When I tell you this appetizer flew off the platter I mean flew!! It’s creamy, savory, has a little crunch — everything you want in the perfect appetizer! While not a traditional bruschetta, I promise it’s a guaranteed crowd pleaser!
I couldn’t find burrata cheese so I decided to make my own blend and I am so happy that I did. Below you will find the best bruschetta and cream recipe you’ve ever had!!
Ingredients:
- 10 slices of ciabatta bread — I got a presliced loaf from Sprouts
- 3 C of grape tomatoes –The multi-colored ones look pretty
- 2-3 Fresh basil leaves
- 4 ounces cream cheese
- 1/4 cup heavy whipping cream –or more, you are going for a creamy consistency
- 8 ounces mozzarella cheese
- Dash of Italian seasoning
- Dash of salt and pepper
- One fresh garlic clove
Directions:
- Preheat oven to 350 F
- Slice grape tomatoes to a thickness you like – I did them in half but thirds would be a great bite
- Sprinkle tomatoes with salt and roast for about 30-35 mins
- Slice the mozzarella into smaller pieces
- Combine both kinds of cheese, heavy cream and seasonings into a bowl and whisk together — I used the whisk attachment on my immersion blender
- Use a HOT grill pan to toast the outside of your bread — I did about 2 minutes on each side
- Once cooled, rub the side of the bread you plan to top with a fresh garlic clove
- Spread the cheese mixtures on each slice of bread, top with roasted tomatoes and chopped basil

Love this recipe and bruschetta in general. Such a slept on delight. Will have to give this one a try. I have an awesome french onion one that I make, but it’s been some time. This reminded me how much I love ALL the bruschetta. LOL.
