One random Sunday, my husband asked me to make him some meatballs. I was super confused as he has never requested them before lol. “What kind of meatballs?” You know the kind in the crockpot, call my mom, she knows.” His mom was just as confused as me but gave me a recipe.
Listen, if your partner requests something specific and you are not confident you can deliver, remix it! That way they can stand on their own merit and not disappoint due to comparison. That is how these Sweet and Spicy Meatballs were created! I took a little of his mom’s recipe + other’s I’ve seen + what I had in the fridge, and made something shake!
Yall, these meatballs were so good that man was eating them cold lol Go me!!! I hope your family enjoys them as much as mine did!
Ingredients:
- 1 C Grape jelly
- 3/4 C Sweet chili sauce
- 1/2 C Sweet Baby Rays BBQ Sauce
- 2 lbs ground beef
- 2 eggs
- 1/2 package Lipton beefy onion dry soup mix
- 1/4 C onions chopped
- 1/2 C plain breadcrumbs
- 2 TBS parsley
- 1 TBS salt
- 1/2 TBS black pepper
- 1/2 TBS garlic powder
- Cooking spray
Directions:
- Preheat broiler and line a baking sheet with foil or parchment paper
- Mix the beef and the ingredients following until blended. Shape into meatballs about 1 inch in diameter. -Makes about 36 meatballs
- Place on a prepared baking sheet – I used parchment paper
- Broil for 8-10 minutes or until golden brown
- While meatballs are baking, combine first 3 ingredients in a saucepan over medium heat and mix until fully combined – about 5 minutes
- Spray your slow cooker with cooking spray
- Layer sauce and meatballs in crockpot and toss to make sure they are all coated
- Cook on low for about 3 hours
