I really hate it when I have to read an entire chapter before I get to the recipe, so I will try not to do that lol
Hubby and I made this white pizza to watch episodes 1 &2 of The Last Dance and paired it with a Longford Estate Pinot Noir Rosé.
Ingredients:
- 1 can of pizza dough (or you can make your own)
- 1 cup ricotta cheese, (plus 2–3 Tbs to dollop on top optional)
- 1/2 Tbs salt
- 1/2 Tbs Italian seasoning
- 1/2 Tbs dried basil
- 1 package button mushroom, sliced
- 1 tsp butter (for mushrooms)
- 1 Tbs butter (for melting)
- 1/4 tsp dried thyme
- 2-3 cups baby spinach leaves
- 1 tsp oil
- 1/2 Tbs garlic powder
- 1 cup shredded mozzarella cheese
- Freshly ground black pepper
- 1/2 tsp red pepper flakes or more if you like it spicy
- 1 tsp minced garlic
Directions:
- Preheat the oven to 450°
- In a medium-size non-stick skillet, add the sliced mushroom and cook on high heat for about 3-4 minutes. The water from the mushroom will start to extract and evaporate
- Once the water from the mushrooms starts to evaporate and mushrooms turn slightly brown, add the butter and dried thyme to the mushrooms. Stir frequently and cook for an additional minute or two. Set aside for later use
- In the same skillet, add the oil and spinach leaves. Sprinkle garlic powder and pinch of salt and pepper to the spinach and cook until all the spinach leaves are wilted (about 3-5 minutes)
- When the spinach is wilted, turn off the heat and set aside
- In a small bowl, mix together 1 cup of ricotta cheese, 1/2 Tbs of salt, 1/2 Tbs of Italian seasoning, and 1/2 Tbs of dried basil
- Flour the working surface and start stretching the dough flat (make sure it’s not too thick or you will need to cook longer, at a lower temp)
- Brush dough with melted butter + minced garlic
- Spread the ricotta mixture to the stretched pizza dough evenly
- Add the cooked mushroom and spinach
- Add a cup (or more) of shredded mozzarella cheese on top
- Sprinkle red pepper flakes if you like spicy pizza. If not, skip this step
- Sprinkle some freshly ground black pepper on top
- Place the pizza in the oven and cook for 12-15 minutes (depending on your oven)
- Take out the oven, wait about 5 minutes then enjoy your white pizza!

Made this pizza over the weekend. It was delicious!! The recipe was easy to follow and the results were amazing. The white sauce was a nice break from traditional pizza and I loved the mixture of garlic and spinach with the added heat of the red pepper flakes. Will definitely make this pizza again!
