Am I the only one that sees the bananas turning brown and think “what can I bake?” Maybe I have a problem but who doesn’t love muffins? Especially Chocolate chip banana nut muffins! These have been our favorite quarantine treat! They satisfy my sweet tooth and they feel guilt-free since they have fruit in them lol If you want to go all-in check out THIS recipe 🙂
Ingredients:
- 1 1/2 cups all-purpose flour (don’t pack the flour in your measuring cup, spoon it into the the cup)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 medium ripe bananas, mashed well
- 1 egg
- 1/2 cup Canola oil
- 2/3 cup nuts, plus more for sprinkling (I used walnuts because that’s that I had on hand. I also love these with pecans)
- 1/3 cup semisweet chocolate chips, plus more for sprinkling ( I have made them with milk chocolate and they are just as good)
- 1 tsp pure vanilla extract
Directions:
- Preheat oven to 350°F or 175°C.
- Whisk together: flour, both sugars, baking soda, and salt in a bowl
- Whisk mashed bananas, the egg, vanilla, and oil to the same bowl and mix until everything is combined (I used an immersion blender)
- Fold chopped nuts and chocolate chips into your mixture with a spatula
- Pour batter into a paper-lined muffin pan (I used a measuring cup to fill each cup a little over 1/2 way)
- Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean
- Remove and let cool for 5 minutes then move to a cooling rack to completely cool before you store
I store these Chocolate chip banana nut muffins in an airtight container. They should be good for about 5 days but I can’t tell you for sure, because we always eat them in about 3 days! LOL
