Hot Chocolate Cupcakes That Will Wow Your Guest

If you have not made a single cupcake all year these Hot Chocolate Cupcakes are where you should break that steak! They call for boxed cake mix, so no need to be intimidated. They are fluffy, moist, and absolutely amazing! With two different frosting options, you can really make this fit the taste of the entire family! I have not gotten when a review of less than 10/10 on these cupcakes over the last 2 years! I promise they deserve a spot on your holiday dessert table.

Ingredients:

Hot Chocolate Cupcakes

• 1 box chocolate fudge cake mix
• 1¼ cups milk
• 2/3 cup oil
• 3 eggs
• 1 small instant hot cocoa packet mix
• 1 box (3.9oz box) instant dry chocolate pudding mix

Marshmellow Buttercream:

• 1/4 cup butter softened
• 1 (7oz jar marshmallow fluff
• 2 tsp vanilla extract
• Pinch salt
• 2 cups powdered sugar
• 1/4 cup heavy cream
• Miniature marshmallow bits

Whipped Chocolate Frosting:

• 2 cups heavy whipping cream
• 1/4 cup unsweetened cocoa powder
• 1/2 cup powdered sugar

Directions:

1. Preheat oven to 350F. Line 2 muffin tins with 24 liners
2. In a large bowl, mix the cake mix, milk, oil, eggs, hot cocoa packet, and dry pudding mix until smooth
3. Fill muffin cups about 3/4 full.
4. Bake for 15-18 minutes or until a toothpick comes out clean/with moist crumbs.
5. Cool completely on a wire rack before frosting

Marshmellow Butter Cream

1. Cream together the butter, marshmallow fluff, vanilla, and salt together in a stand mixer until combined and smooth
2. Add in the powdered sugar, about 1/4 cup at a time, alternating with the heavy cream until frosting is light and fluffy
3. If you want the lighter frosting to pipe, add more powder sugar, it’s really sweet, so a little goes a long way

Whipped Chocolate Frosting

1. Whisk all frosting ingredients in a stand mixer until light and fluffy — about 3-4 minutes
2. Add to a piping bag to decorate cupcakes
3. Top with mini marshmallows and chocolate syrup
