Shortbread is a classic cookie that we all should have in your recipe box! I tried a few different variations and this Brown Sugar Shortbread one is it! If you like things on the sweeter side, add the maple glaze or dip them in chocolate. I found them to be great in all 3 ways!
Ingredients:
- 1 cup softened butter
- ½ cup brown sugar (lightly packed)
- 2½ cups all purpose flour
Optional Maple Glaze:
- 3/4 cup powder sugar
- 1/4 cup maple syrup (add a little more if it feels too thick)
Directions:
- Preheat oven to 325F and line a cookie sheet with parchment paper
- Beat butter until creamy, about 2 minutes using a stand mixer (Pictures below)
- Add flour to butter a little at a time until mixed
- Knead dough on a lightly floured surface until the dough forms a ball
- Roll out dough and use cookies cutters to cut out fun shapes
- Bake at 325F for about 10-12 minutes — You don’t want them to brown
- Let cool on cookie sheet for a few minutes before transferring to a cooling rack
- If you want to use the Maple Glaze — Mix 3/4 cup powder sugar and 1/4 cup maple syrup until combined
- Dip cooled cookie in glaze and let harden on a wire rack
- Store in an airtight container for a week on the counter
