I woke up wanting donuts but didn’t feel like leaving the house. Target didn’t have the donut pan I ordered so whala, donut holes! I have been waiting to try apple cider donuts all season and today was the day! I grabbed my mini muffin pan and the rest was history!
These donut holes are light, fluffy, and too easy to eat! I have 3 ways to coat them, depending on your taste buds, so give the full recipe a read before making!
Ingredients:
- 2 C all-purpsose flour
- 1 C granulated sugar
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 C apple cider
- 1/2 C sour cream
- 1 egg
- 1.5 tsp vanilla extract
- 1 tsp dark corn syrup (you can swap for molasses or maple syrup, whatever you have on hand)
- 1/4-1/2 C melted butter, depending on the coating method you use
- 3/4 C granualted sugar
- 1.5 tsp cinnamon
Directions:
- Preheat oven to 350F
- Oil a mini muffin pan
- In a large mixing bowl, wisk flour, 1 cup sugar, baking powder, and 2 tsp cinnamon
- Mix in apple cider, sour cream, vanilla extract, and vanilla until your mix is smooth
- I filled a piping bag and piped the mini muffin cups about 3/4ths full. You can use a spoon, for about 1 TBS of batter in each
- Bake for about 12 minutes or until the tops spring back when lightly pressed
- Coat to linking, per the options below
For the coating I am giving you a few options:
- Dip the donut hole in melted butter and roll in cinnamon sugar mixture
- Lightly brush the top with melted butter and roll in cinnamon sugar mix while hot
- Roll the donuts in cinnamon sugar mix while hot
- Leave them plain, they are super yummy
I was able to get 48 donut holes out of this batter and stored them in an air-tight container, on the counter, for a few days.
