It’s National Hummus Day, so it felt like the perfect time to whip some up! This Avocado Hummus is one of the easiest recipes I have made, and it checks every box in the guilt-free snacking category!
This Avocado Hummus has a hint of cilantro and a whole lot of yummy! The title is also not an exaggeration. It literally takes five minutes to make this avocado hummus! Throw it all in the food processor, and enjoy! I ate it with pita bread, but I also have veggies to dip for round 2 🙂
Ingredients:
- 2 15oz cans of chickpeas/garbanzo beans
- Reserve 1/4 C of the water from the can in the event your hummus gets too thick
- 1 Avocado
- 1/2 C cilantro (you can throw in the stems and all)
- 1 TBS minced garlic
- 1/4 C lime juice
- 1/2 Olive oil
- 2 tsp salt
Directions:
- Drain chickpeas (reserve 1/4 cup of water)
- Add all other ingredients to your food processor or blender and blend until smooth
- Garnish with a little olive oil and chopped cilantro
- Enjoy with pita chips, veggies, or sliced peppers
