I started playing with this gingerbread cookie recipe last year when we hosted our family in our new home for Christmas! My nephews really wanted to decorate gingerbread men so you know Tee Tee Laya had to make that happen! When I sent my sister a picture of my cookies this year, she was like “wow, your decorating skills are much better than last year” lol!
Ingredients:
- 2 C AP Flour
- 1 tsp baking soda
- 1 TBS ground ginger
- 1 ½ tsp ground cinnamon
- 1 egg
- 3/4 C butter, softened
- 3/4 C brown sugar, packed
- 1 3.4 oz pkg Jello-O Butterscotch pudding
Directions:
- Combine all ingredients except flour
- Gradually add flour until everything is well mixed
- Refrigerate dough for 1 hour
- Heat oven 350 F. Roll out dough on a floured surface (1/4″ thick), use a cookie cutter, and place on sprayed baking sheet 2″ apart
- Bake 10-12 minutes or until edges are lightly browned
- Cool on baking sheet for 3 minutes and move to a cooling rack to cool completely
