Nothing says summer like strawberries and lemons! I made this a few years ago as an alternative to my strawberry cupcakes and decided to remix it by changing the vanilla pudding to lemon this summer. Both variations are BOMB, but I hope you enjoy this one as we say goodbye to summer!
Ingredients:
- 1 1/2 Family size All Butter Pound Cake (I used Sara Lee)
- 2 (3.4 oz) boxes for instant lemon-flavored pudding
- 2 C of milk
- 1 (14 oz) can sweeten condensed milk
- 1 large tub of Cool Whip
- 2-3 pints of strawberries (sliced and chopped)
- 1 Lemon to zest for garnish
Directions
- In a large bowl whisk together pudding mix, and both kinds of milk until smooth
- Fold in about 3/4 of the whipped cream
- In a large bowl, layer the following ingredients: Cake, cream mixture, strawberries and repeat until finished
- Garnish with chopped berries, whipped cream, and lemon zest
- Cover with cling wrap and chill for at least 2 hours before serving
NOTE: I wouldn’t make it more than 24 hours in advance
Store in fridge for up to 3 days
This Strawberry Lemon Trifle takes no time to make and even less time to eat! Its a super light dessert that doesn’t weigh you down, which makes it perfect for summer! I will miss the summer flavors but I won’t miss the heat! It has been brutal here in Georgia so the fall temps are more than welcome 🙂
